Wine made from young vines of Nebbiolo is the result of a white vinification of red grapes. After soft pressing the wine is left in contact with the skins for 6 hours and after being separated from the skins and start the fermentations in stainless steel tanks at a controlled temperature of 20 °. After fermentation is stored at low temperatures to prevent malolactic fermentation, it is bottled on the March following the harvest. The color is pink, typical of Italian rosés, with a distinct bouquet of violet and rose, typical of Nebbiolo, in the mouth it is slightly tannic and full-bodied to be served as an aperitif or with fish dishes of medium structure.
